A Personal Note
This is one of our go-to meals at home — my son, Krish, loves making his pita with the Greek chicken and salad mix. I enjoy it as a plate of juicy chicken, crisp salad, and fresh vegetables. The flavors of red onion, tomatoes, and cucumber make it incredibly refreshing, simple, and satisfying. I don’t use feta, but you can add it if you like. The oregano and garlic give the chicken such an aromatic, inviting smell — it always makes the kitchen feel warm and welcoming.
Ingredients (serves one generous portion)
- 6 oz grilled or pan-seared chicken breast (or thighs if preferred)
- 2 garlic cloves, crushed elegantly (or 1/4 tsp garlic powder)
- 1 small cucumber, chopped
- 5-6 cherry tomatoes, halved
- 1/4 small red onion, thinly sliced
- 1 tbsp olive oil – buy here on amazon
- Juice of 1/2 lemon
- 1/2 tsp dried oregano
- Sea salt + black pepper to taste
- Optional: Few fresh parsley leaves for topping
- Optional: 1 tbsp crumbled feta
- Optional: 1 small whole-wheat pita (adds ~3g fiber)
- 2 tbsp tzatziki (for serving)
🍴 Method
1️⃣ Season chicken with garlic (or garlic powder), salt, oregano, pepper, and 1/2 tsp of olive oil.
2️⃣ Grill or pan-sear until cooked through. Let rest and slice.
3️⃣ In a bowl, combine cucumber, tomatoes, and red onion. Mix with lemon juice, olive oil, salt, and pepper.
4️⃣ Top salad with fresh parsley leaves (optional).
5️⃣ Plate chicken alongside the salad and tzatziki. Add feta and pita if using.

- Add a handful of chickpeas to the salad for extra fiber and texture.
- Fresh mint or dill can be used as a substitute for parsley for a different twist.
